fix: Update remaining courses to reflect actual Anthropic Learn curriculum

Browse source 
- Replaced 'Advanced Prompt Engineering' with 'Claude with Amazon Bedrock'
- Replaced 'AI Safety & Best Practices' with 'Claude with Google Cloud's Vertex AI'
- Removed 'Enterprise Integration' as it's not part of the current curriculum
- Updated learning path diagram to show correct upcoming courses
- Updated progress overview table with actual course names
- Updated timeline section to reflect real courses

These changes align with the actual course offerings on Anthropic's Skilljar platform.
